Grilled Chicken Caesar Pasta Salad

Ingredients 

  • 2 boneless, skinless chicken breasts
  • 8 oz penne pasta
  • 1 head romaine lettuce, chopped
  • ½ cup Caesar dressing
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1 tsp garlic powder
  • Lemon wedges (optional, for serving)

Instructions 

Cook the pasta: Boil the penne in salted water until al dente, about 8-10 minutes. Drain, rinse with cold water, and set aside.

Season the chicken: Rub the chicken breasts with olive oil, garlic powder, salt, and pepper.

Grill the chicken: Heat a grill pan or outdoor grill to medium-high heat. Grill the chicken for 6-7 minutes per side, or until fully cooked through and internal temperature reaches 165°F (75°C). Remove and let rest for 5 minutes, then slice.

Assemble the salad: In a large bowl, toss the cooked pasta with romaine lettuce, Caesar dressing, and Parmesan cheese.

Top with chicken: Place the sliced grilled chicken on top of the salad.

Serve: Garnish with extra Parmesan and lemon wedges, if desired.
