Ingredients:

Butter: 150g (⅔ cup)

Sugar: 150g (¾ cup)

3 Eggs

Plain Flour: 175g (1 cup, 3 tablespoons)

Baking Powder: 1 teaspoon

Vanilla Extract: 1 teaspoon

Almond Essence: ½ teaspoon (optional)

Dried Fruits: 400g (about 2 cups)

Dried Dates: 200g

Green Glazed Cherries: 100g

Raisins: 100g

Measuring cup size: 240ml

7-inch round baking pan

Oven preheated to 170°C (338°F)


Instructions:

Preparing the Cake Batter:

1. Preheat the Oven: Preheat your oven to 170°C (338°F).

2. Prepare the Pan: Grease and flour a 7-inch round baking pan to prevent sticking.

3. Mix Wet Ingredients: In a large mixing bowl, cream together 150g (⅔ cup) butter and 150g (¾ cup) sugar until light and fluffy.

4. Add Eggs: Gradually add the eggs, one at a time, beating well after each addition.

5. Incorporate Flavors: Stir in 1 teaspoon of vanilla extract and ½ teaspoon of almond essence (if using) for enhanced flavor.

6. Combine Dry Ingredients: In another bowl, sift together 175g (1 cup, 3 tablespoons) plain flour and 1 teaspoon of baking powder.
